Radioactive Tuna Found Off California Coast

It is true, this is what fisherman worried about what would happen after last years earthquake in Japan’s nuclear plant. The mighty bluefin tuna carried radioactive contamination that leaked from the nuclear plant to the shores of the United States 6,000 miles away — the first time a huge migrating fish has been shown to carry radioactivity for such a long distance.

“We were frankly kind of startled,” said Nicholas Fisher, one of the researchers reporting the findings online Monday in the Proceedings of the National Academy of Sciences.

The levels of radioactive cesium were 10 times higher than the amount measured in tuna off the California coast in previous years. U.S and Japanese governments say that’s still far below safe-to-eat limits. 

I don’t know about you, but I feel like I won’t be eating Tuna for a while.

Fun Fruit Ideas :)

Hi everyone!

Since many of us will be attending/hosting BBQs and family gatherings tomorrow, I wanted to share some fun fruit party ideas :) I know how we all love low cal healthy snacks!

1. Fruit Kabobs

 - Use any fruit combination that you like. You can also dip in chocolate for some added sweetness :) Serve and enjoy!

2. Fruit Cones 
 - This is such a perfect summer treat! With these you have a couple of options… You can fill the cone with ice cream, low fat pudding or whip cream — the possibilities are endless!  
3. Fruit Pizza
 - All you have to do is buy low fat or low cal sugar cookies, top with cool whip and add fruit! This has always been a favorite of mine :) 
As we gather with our families and friends and enjoy the rest of our three day weekend, remember those that fight and defend our freedom everyday. We are truly blessed with the lives we are given here in America. Memorial day gives us the opportunity to thank and our soldiers and honor those who we’ve lost. God Bless and have a very happy MEMORIAL Day.

Banana Oatmeal Smoothie

My breakfast this morning:

                                

Blend together one banana, 1 cup ice, ¼ cup cooked oatmeal, 1 tablespoon chopped almonds, ½ cup milk of your choice (I prefer almond milk), pinch of cinnamon

Fruit Tacos with Chocolate Tortillas!
Tortillas 1 cup whole wheat flour 3 cups all purpose flour 1 tsp. baking powder ¼ tsp. salt 1/3 cup cocoa powder 1/3 cup coconut oil 4 tbsp. agave 1 ½ cups warm water
Fruit Salad ½ cup papaya, diced ½ cup mango, diced ½ cup blueberries ½ cup strawberries, diced ½ cup kiwi, diced juice from one lime
In a large bowl, sift together flours, baking powder, salt and cocoa powder. Add coconut oil, agave and warm water and mix to form a large ball of dough.
Transfer the dough to a floured work surface and knead for 5 minutes. Cut the dough in half, and continue to cut each ball of dough in half until you have 16 pieces. Roll each piece into a ball. Let the dough rest for 10 minutes.
Heat a cast iron skillet over medium heat. Do not add oil to the skillet as the tortillas need to be cooked on a dry surface.
On a floured surface, roll the dough into 16 circles about ¼ inch thick and 6 inches in diameter. Once the skillet is hot, add one round of dough and cook for 30 seconds per side. Place the cooked tortillas on a plate lined with a damp paper towel.
Continue this process until all 16 tortilla’s have been cooked.
To prepare the tacos, layer the fruit on a tortilla and sprinkle with lime juice. You can serve it as is or add any toppings of your choice.

Sort of obsessed…

I love pizza, especially when I’m home… there’s nothing like Long Island Pizza. I realize it’s not the healthiest option so when I have a pizza craving I make these!! 

Easy steps: 1) Add olive oil & grill zucchini 2) Add sauce, cheese, and toppings 3) Broil until cheese brown! Enjoy:)

Best Banana Bread

Okay so this might not be the healthiest I have ever blogged about but it is probably one of the most delicious! 

Nutella Banana Bread

Ingredients

  • 2 cups all-purpose flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/4 cups mashed ripe banana
  • 1/3 cup skim milk
  • 1 tsp. vanilla extract
  • 3/4 heaping cup Nutella 
  • Reese’s Peanut Butter Chips !! 

Directions

1. Preheat oven to 350 degrees. Spray 8×4-inch loaf pan with nonstick spray.

2. In a medium bowl, whisk together flour, baking soda & salt.

3. In a separate large bowl, beat sugar and butter with an electric mixer at medium speed until blended. Add eggs, one at a time, beating well after each addition. Add banana, milk and vanilla. Beat until blended.

4. Add flour mixture, beat at low speed just until flour is incorporated (don’t over mix).

5. Spoon Nutella into a small dish and soften in the microwave for about 15 seconds.

6. Mix the Nutella into the rest of the batter. Mix to your liking! 

7. Bake 50 to 60 minutes, it will seem a tiny bit undercooked but that’s what makes it good. Cool for at least 15 minutes in the pan, and then turn out onto a wire rack to cool completely.

Dinner Tonight :)

I made quinoa with bean sprouts, asparagus, and snow peas! Yum!

What is Qunioa? Quinoa is an ancient, nutty-flavored grain that was highly esteemed in the Inca culture. Also referred to as the “mother grain,” dating back 5,000 years, this good for you grain is protein-rich, gluten-free and incredibly versatile in the kitchen. Even better, it cooks in 15 minutes – faster than many other whole grains – and can be transformed into dishes for breakfast, lunch and dinner, as well as healthy desserts.

Asparagus Recipe

I love vegetables and I cook them almost every night of the week. I love my recipe for roasted asparagus so I wanted to share it with you guys! P.S It’s so simple!

What you need:

1 pound fresh asparagus spears 

1 tablespoon olive oil

1 teaspoon Vegeta 

1/2 teaspoon salt

1/4 teaspoon ground black pepper

Preheat oven to 400 degrees F.

Place asparagus on a baking sheet (after you have peeled the outside layer and cut ends). Drizzle with oil and sprinkle with salt, pepper and Vegeta. Roast 25 to 30 minutes, until tender.
